A Variation of Chicken Enchilada Casserole

Two years ago a friend of mind introduced me to Chicken Enchilada Casserole. Over time my recipe has changed a little bit and it's a little bit different than the usual enchilada casserole but my family can never eat enough of it when I make it!

I like to add a lot of veggies to my recipe and it depends on what's in my fridge but this is usually what I use. I also don't use a measuring cup but I included approximate measurements of what I use.  It may not be the healthiest meal because of the sauce, but it sure tastes good!

What you'll need:


  • 3 Cooked chicken breasts cubed (already cooked whole chickens you can buy at the grocery store work too)
  • 1 can mushroom soup
  • 1/2 jar of salsa
  • 1/2 tub of sour cream
  • 1/2 cup milk
  • 8 small tortillas
  • 1 yellow onion, chopped
  • 1 zucchini, chopped
  • 1 red pepper, chopped
  • 1 cup cooked corn
  • 1/2 cup cooked, cut up, green beans
  • 1 small can of diced tomatoes
  • 1 cup of shredded cheddar cheese
  • Pepper to taste
What to do:
  1. Preheat oven to 400 degrees F. Lightly grease medium size baking dish (I usually use a 2 quart oval corningware dish).
  2. In a large frying pan sautee onions. Half way to onions being done add zucchini, red pepper, corn, green beans. Once all vegetables are soft add cubed cooked chicken and diced tomatoes. Remove from heat.
  3. In a large bowl mix mushroom soup, salsa, sour cream. Add milk. You may need more or less milk depending on how much salsa and sour cream you use. Add pepper to taste.
  4. Place 1/3 of sauce in separate bowl. 
  5. Mix remaining sauce with vegetable and chicken. 
  6. Spoon vegetable mixture into tortillas, roll up tortilla, and place into casserole dish. Repeat for all 8 tortillas. 
  7. Pour remaining 1/3 of sauce over wrapped up tortilla shells in baking dish.
  8. Cover and bake for 40 minutes at 400 degrees F. 
  9. Last 5 minutes in oven sprinkle cheese over dish and return to oven for remaining time.
  10. Let dish cool for 15 minutes before serving.
This is what your tortillas should look like before adding the remaning 1/3 of the sauce. If I have left over veggies I usually add them in to the sides or just on top. 
If I have a lot of left over veggies I make a personal sized casserole with a tortilla on the bottom, veggies and sauce in the middle, and a tortilla shell on top. Cook it the same way as the casserole.

InstaFriday - June 15/12

I hope everyone had a great week! Sorry for the lack of posts this week, I've been busy with work! Tomorrow I'll be putting up a post with a delicious recipe for a different take on Chicken Enchilada Caserole. Trust me, it's mouth watering good!

I'm posting on my iPhone right now and I don't know how to make my photos appear in specific spots so the photos may all be bunched together.

Burger photo- This week my husband made the best (emphasis on 'the best') hamburgers I think I've ever had. He bought a marinade and then added spices and pureed red onion and let the beef sit in it and take in all the flavor. After cooking he dressed the burgers with mozzarella, bacon, grilled onions & mushrooms, tomato, and pickles. Mmm mmm delicious! Thinking about them makes my mouth water.

M&M's - I've never seen almond m&m's before. Maybe they've been around for a while but I just discovered them this week and now I'm hooked :)

Laundry - As I mentioned, it's been a busy week. Somehow I kept on top of doing laundry but the folding part hasn't really happened. At least we have clean clothes to wear...and if they're wrinkled from laying on the couch they can go back in the dryer! :) Can you guess how I'll be spending my Friday night??

{exhausted}



Today I'm exhausted. 
We had a great weekend and enjoyed going out for a family bike ride but now I'm wiped. 
Anyone else feel this way after a great weekend? 
Sometimes I think we need a day to recover from the weekend.
Thankfully I'm not working today so I can bum around as much as I want to.... you know all that extra time that I have while taking care of a 1 and 2 yr old, cleaning, and laundry. ;)
As tired as I feel today I'm still hoping to go strawberry picking after nap time this afternoon.

There's nothing a little coffee can't fix right??

InstaFriday - June 8/12

I've been taking the kids down to the beach whenever I'm not working and I think we've already been there more than the last 2 summers combined! I usually make a stop on the way for an iced coffee from McDonalds (we don't have a Starbucks in town so I have to work with what we've got!) and then relax and enjoy the peacefulness of the beach as the kids play. 

Yesterday was the first time I thought of playing frisbee with Kallie and she was giggling and running after the frisbee. She loved it - of course except for the time I threw the frisbee and it hit her in the chest... oops!

Bronson has discovered that he can climb on top of trucks. He hasn't tried to climb out of a playpen yet but I'm sure that's not too far off!


Dress up is a daily occurrence at our house.
This past week Kallie's dress up favourites have been a chef outfit and using Mr. Potato Head's bits and pieces for herself. I love that she has an imagination and is always using it! :)

Remember a week or two ago when I told you about the amazingly awesome deals I found at walmart.ca? After I wrote that post I had to order a few more things and this is what I ordered! I put my dog in the picture to give you an idea of just how big the jeep and dolls actually are! After taxes and shipping all of this came to $54.35! Needless to say, I'm pretty much done my Christmas shopping for the kids! Now I just have to find a place to hide it all for 6 more months! 

I was watching Holmes on Homes the other day and Dupree was sitting and staring at the tv for a good 15 minutes. I've never seen him so interested in the tv before and I had to take a picture!

It's finally Friday and I hope that everyone has a GREAT weekend! :)

Kids, Sand, and a Picnic


It's only the beginning of June and, besides last 3 days, it's felt like it's mid summer. 
We have been spending lots of time outside playing at the park and the beach.

Kallie loves watching the ducks play in the water and the seagulls trying to grab everyone's food.
Whenever she sees me with my car keys she asks me if we're either A) Going to the beach/park or B) Going shopping. 

This girl loves to shop. I think I've created a shopping monster! :)


At first Bronson hated the sand.
After a few visits to the beach he's discovered how messy and fun sand is! 
It's amazing how much sand can end up in one small boy's diaper!!



We've gone for two picnics so far this season and Kallie absolutely loves them.
Almost everyday she sets up a blanket and has a picnic with her dolls in the tv room. 
Bronson usually isn't invited to her picnics because likes to be destructive and throw all of her babies and food... typically boy! :)


I'm really looking forward the rest of the summer and all of the memories we're making with our little family. 

There's nothing better than an outing with your husband and kids!

Round 2 of Two Week Meal Planning

Two weeks ago I wrote here that I was going to start meal planning. 
I have to admit that my first 2 weeks of meal planning didn't exactly go as smoothly as what I had hoped. 
I did my grocery shopping at the beginning of the 2 weeks and I should have had no problems but....
In that short 2 week period I had 2 fridges break. The first fridge was already broken and we had to use the freezer as the fridge but it died and I lost a whole lot of milk and some meat. 
So, back to the grocery store.
We did get a new (well new to us.. used off of kijiji.ca) fridge and the day after we got it our second fridge in the garage (that had been working fine) gave out and I lost 10 hamburger patties, bread, frozen veggies, 2 chicken breasts, and some pork chops. 
So, back to the grocery store I went. 

Needless to say, I'm frustrated with going grocery shopping and I'm hoping that we don't have any more fridge problems for a long time! My new/used fridge is working great so far! :) 

Here's what my meals look like for this week and next...


Last time I posted about meal planning I mentioned that I would post my recipe for Chicken Enchilada Casserole but because of my fridge issues I never got around to making it. As long as my fridge keeps working (I'm counting on it to keep working!) and I don't lose any more food I will post it later on this week. 

Has anyone else been trying out the whole meal planning thing?
